What is suya spice?

Suya spice, known as yaji in Hausa, is a West African blend built on ground peanut, ginger, garlic, paprika and chilli. It is the seasoning behind suya, the grilled skewered meat sold on street corners across Nigeria. It is smoky and nutty rather than sharply hot.

Does your suya spice contain peanuts?

Yes. Koshe Suya BBQ Spice contains peanuts and is not suitable for anyone with a peanut allergy. Full ingredients: peanuts, ginger, garlic, paprika, cayenne pepper, black pepper, onion powder, salt and natural spices. Our Pepper Soup Spice and Chicken Dry Rub do not contain peanuts.

What is in the Pepper Soup Spice?

Seasoning (monosodium glutamate), chicken stock seasoning, pepper, uda seed, alligator pepper, garlic, cumin, njangsang, ginger, cayenne, fennel seed, nutmeg and shallots. Because it contains chicken stock, this blend is not suitable for vegetarians or vegans.

What is in the Chicken Dry Rub?

Garlic, onion, paprika, black pepper, ginger, herbs, salt and natural spices. Despite the name it contains no chicken, it is a rub for chicken.

Are your products halal, vegan or gluten free?

We do not currently make any of those claims. We are not certified halal or gluten free, and our Pepper Soup Spice contains chicken stock. If any of these matter to you, write to us before ordering and we will tell you exactly what we know about a particular blend.

How hot are they?

Our Pepper Soup Spice and All-Purpose Marinade Mix are mild to medium. Our blends are built for depth of flavour rather than raw heat, so you can add more without overwhelming a dish.

Using and storing them

How long do they keep?

One year from the date of manufacture. Store in a cool, dry cupboard out of direct sunlight and reseal after each use. Spices do not spoil dangerously, but they lose aroma over time, so use them while they are fragrant.

How much should I use?

As a starting point, about one tablespoon of dry rub per 500g of meat, or two tablespoons of pepper soup spice per litre of broth. Adjust from there. These blends are forgiving.

I have never cooked West African food. Where should I start?

The Chicken Dry Rub. Rub it on chicken thighs, roast them, and you will understand the flavour profile in one meal. Suya on skewers is the natural next step.

Can I use suya spice on things that are not meat?

Yes. It is very good on roasted vegetables, potato wedges, popcorn and grilled halloumi. The peanut base works anywhere you would use a savoury, nutty seasoning.

Can I collect in Winnipeg?

Yes. Local delivery and collection are both available in Winnipeg. Choose the option at checkout and we will confirm the arrangements with you.

Do you offer a discount on larger orders?

Yes, and it applies automatically at checkout. Buy 8 or more 50g jars and save 10%. Buy 4 or more 100g jars and save 10%. Buy 3 or more All-Purpose Marinade Mix and save 10%.
